Oh my word, I first shared this recipe with you way back on May 10, 2012…TEN YEARS AGO! And you know what?! To date, this is one of THE MOST VIEWED recipes every single spring and summer here on my blog.
Basically, this corn salad is famous…and super delicious 🙂 .
It’s also SO EASY!! I cannot remember the last time I hosted a patio party or outdoor event when I did not serve this dish. You make it in advance (bonus!), it’s unique and it’s always devoured.
In honor of my mama today, I thought I’d re-share one of her famous recipes…a truly “Texas” way to serve salad.

Mama’s Corn Salad
- Prep Time: 5 minutes
- Total Time: 5 minutes
- Yield: enough for a large side dish!
Description
No backyard party or poolside affair is ever complete in our family without this easy (make ahead!) corn salad from my mom!
Ingredients

2 (15 oz) cans corn, drained
-
2 cups cheddar cheese, grated

1 cup mayonnaise
-
1 green bell pepper, chopped
-
1 red onion, chopped
-
1 (10 oz bag) Chili-Cheese Fritos
Instructions
- In a large bowl, mix the first 5 ingredients together, cover and chill until ready to serve.
- Toss Fritos in right before serving.
- Enjoy!
Notes
To keep this g-free friendly, substitute with plain Fritos instead of chili cheese.

I love everything about this recipe and it seems really good. I am going to try and make it. I just don’t understand how you eat it. Do you dip the Fritos in the corn salad or do you eat it just with a fork, like a salad?

We eat it with a fork like a salad (or side dish). Catherine and Andrew (our non-Texan family members) give us a hard time anytime we put chips in a salad…but in Texas, that’s just like a crouton! 😉

Try it with jalapeños in place of bell pepper (the recipe we have uses jalapeños so is hotter of course. I know you love spicy!!) I agree it is crazy how much people love this corn dip recipe!!
