…I call this MEATBALLS OVER SCRAMBLE 🙂 .
This was my lunch last week. As you know, I’m always trying to get tons of protein into my diet (my goal is 100 grams a day). I know this isn’t everyone’s goal/cup of tea/whatnot, but many of you ask me “how I get protein into my meals” this is one way. I had leftover meatballs in my fridge, so on this particular day, I whipped up one of my SCRAMBLES using three eggs and then topped it with five of my EASY BAKED MEATBALLS along with half an avocado.
So there you go! As you know, these posts aren’t typically “recipes” just ideas of what’s exactly on “my plate”.
Speaking of my plates, I’ve shared this before, but if you’ll notice, FOR YEARS (maybe 10?), I use THESE PLATES almost exclusively. Here’s the kicker though, I bought the SALAD PLATES (not the dinner plates) years ago to use as well, salad plates, but when they arrived, they were way too big (in my opinion) for a salad. They were almost as big as my normal dinner plates (just a smidge smaller), but I thought they would be perfect for my kids (who were really little at the time) to use as dinner plates.
Fast forward, I started taking my recipe photos on these “salad” plates because food looks “better” when the plate is full. I am almost always the one that eats the plate that was photographed (I don’t make my family eat the plate that I’ve been hovering over photographing), so I ended up also eating most of my meals off of these plates and well, they’re really the perfect size.
Now, regardless of whether I’m photographing or not, I pull out these plates. As you can tell, they’re scraped and chipped from a decade of use, but they’re still my favorite. Should you be in the market for a set of plates that are not quite as large as a normal dinner plate, I clearly love these.

Oh my gosh, I haven’t because it’s a hodgepodge of randomness collected over the years. None of it matches…it’s a big ole mess.

Bummer, was hoping you had a flatware recommendation because not only does my 18yo son take food with him everywhere he also takes my flatware and perhaps throws it away?? I’ve never related to a sentence about flatware more, LOL! We have a spoon from my cousins house in our drawer because said son swiped it at Christmas and brought it home in his container he’d eaten out of…oops! I enjoy this series and especially this creative plate of food! 🙂

Melaniel…. In regard to you missing cutlery as it’s taken out of the house… I bought several 4 packs of stainless steel forks, knives, spoons at Walmart for like a $1 for each pack. They have individual cutlery in bins next to the packaged stainless silverware. I pack the Walmart silverware for my lunches and my son’s school lunches. That way-if it doesn’t come home-it’s not the end of the world. We both like actual silverware to use in our lunches. Who can eat soup from a thermos with a plastic spoon??? I keep them next to our school lunch packing supplies so they are always separate from the rest of the silverware. Buying Walmart or Dollar store silverware for lunches was a game changer at our house.

Ok dumb question. With concentrating on protein, do you find yourself taking in less veggies? Or do you get most of that at dinner anyway?

Yes! I do. I take in less of most things. My aim is always protein and then after that, good fats (like avocado) and then veggies and carbs.

My family uses white square plates from Williams Sonoma and we always reach for the “salad” plate as well. It is the perfect size for food as well as easier to carry and wash. I got them years ago after seeing you say that food looked better on white plates and thinking you were so right. Love them.

These help so much!! I too am aiming for 100 grams of protein daily… somedays I do really well, and well, today, big fail! I need to go make some meatballs!

Shay, does Andrew have you and Smith eating dozens of eggs each week now right along with him? Lol! How many eggs does your family go through in a single day? 😉

We eat so many eggs! So far this morning, I used 8 to make Smith’s breakfast and then two to make the little girls’ breakfast tacos. I will have four at lunch and my guess is that Andrew will have 8 when he makes his own breakfast (probably happening right now as I type this). We eat A LOT of eggs!

Thank you for the tip on using salad plates. I’ve always had salad bowls, so didn’t think much about using a smaller plate for a fuller aesthetic! I will buy some in the near future 😊
