On Wednesday night, I had my parents, sister-in-law, nephews and niece over for dinner and made my easy TACO RICE BOWLS. I love simple recipes like this because everyone was able to build their bowl and make it their way (whether they were the grandparent looking for spicy or the four year old looking for cheesy).
This isn’t even a recipe, it’s just a friendly reminder to build a bowl this weekend for a quick, hearty and delicious dinner.

PrintTaco Rice Bowls: REPOST!

Description
This isn’t even a recipe, it’s just a friendly reminder to build a bowl this weekend for a quick, hearty and delicious dinner.
Ingredients
- 1 pound of ground beef
- Extra Virgin Olive Oil (EVOO)
- 1 (1 oz) packet of taco seasoning
- 1 (15 oz) can of black beans, rinsed and drained (optional)
- about 3 cups of rice, cooked and ready to eat (we use frozen rice)
- your favorite salsa and/or pico
- guacamole (we love Tab’s Guacamole)
- 1 red onion, chopped
- shredded cheddar
Instructions
- In a skillet over medium-high heat, brown up your ground beef in a drizzle of EVOO. Once it’s browned and crumbly, stir in your taco seasoning and your black beans (optional, if you don’t love beans, omit them).
- Let the meat and beans heat up just a few minutes and then you’re ready to assemble.
- In your bowls, add in rice to each one followed by your black bean and beef mixture followed by your toppings (salsa, guacamole, chopped onion and cheddar).
Notes
Of course, this one you can really mix and match! I also had candied jalapenos available, sour cream and chopped green onions too. This isn’t a recipe…it’s an idea. This is also super simple to double or triple.
I kept my ground beef mixture warm in the slow cooker so that I could greet and welcome my guests without having to stand at the stove.

I do the same idea for Chinese food. Start with rice or noodles, add your other flavors. . .chicken or beef, sweet and sour, green onions, celery carrots, Any other toppings you like!
