Who doesn’t love a little seasonal fruit and oatmeal in a bar?
These bars are simple to make and honestly, because they’re not super sweet, they work as a breakfast bite too.

Berry Oatmeal Bars

These bars are simple to make and honestly, because they’re not super sweet, they work as a breakfast bite too. Happy baking! xx
Ingredients
- 1½ cups all purpose flour
- 1 stick of butter, melted, plus 4 tablespoons more
- 3 tablespoons sugar
- 1 teaspoon baking soda
- 1 egg
- 2½ cups rolled oats (you can use quick cooking), divided
- 1½ cups fresh strawberries (roughly chopped)
- 1½ cups fresh blueberries
- 1 cup of brown sugar
Instructions
- Preheat your oven to 350 degrees.
- Grease a 9×12 baking dish. Set aside.
- In a large mixing bowl, beat together with an electric mixer your flour, 1 stick of melted butter, sugar, baking soda, and egg. Stir in 1 cup of rolled oats.
- Take this batter and press it into your prepared baking dish as the “crust”. This batter is thick. I just take a spatula and press it across.
- Next, toss your chopped strawberries and blueberries together in a small bowl. Sprinkle the mixed berries over the “crust” layer.
- In a separate smaller bowl, stir together your remaining oats, melted butter and brown sugar. Sprinkle this mixture across the top of your bars.
- Pop your bars in the oven and bake about 25 minutes or until the edges are lightly browned. Remove from oven and allow to cool 5 minutes before slicing into bars and serving.
Notes
Just crumble your topping right over the fresh fruit. It will bake up beautifully. You can substitute with gluten-free flour and oats to make this gf friendly too.
