I don’t know about you, but I’m in “full fall” mode right now which makes it the perfect time to once again share my family’s FAVORITE fall recipe (let’s be real, probably their favorite recipe of all time!) these 3 INGREDIENT PUMPKIN CHOCOLATE CHIP MUFFINS!
These are easy enough that even my littlest kiddos can whip them up independently (with just a little help from me with the oven).
Plus bonus, you can easily tweak them and make them GLUTEN-FREE too!
Grab those three ingredients and get in the kitchen.

3 Ingredient Pumpkin Chocolate Chip Muffins
- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Yield: 1 dozen 1x
Description
It only takes three ingredients to make these delicious muffins! There’s a little bite of autumn in each and every one.
Ingredients
- 1 box of Spice Cake Mix
- 1 (15 oz) can of pumpkin (I use Libby’s)
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350 degrees.
- Line a 12-count muffin tin with cupcake liners.
- In a mixing bowl, combine cake mix with canned pumpkin and work it with a spoon. The batter will be pretty thick. Once the batter has been combined, stir in your chocolate chips.
- Fill your muffin liners 2/3 of the way full and bake about 15 minutes.
- Remove from oven and let cool in the pan 5 minutes before removing.
Notes
Let’s be honest here…spread some store bought cream cheese frosting on these babies and you have yourself a cupcake. No oil, no eggs, no guilt, right? After they cool, you can also pop them in the freezer inside a freezer bag and then just remove them on busy mornings. About 30 seconds in the microwave and breakfast is ready to go. One more little tip, substitute chocolate chips with either butterscotch or cinnamon for a whole new taste experience!

It’s not fall until I make Shay’s pumpkin muffins!! Although this year I cheated on you a bit and used the Kodiak Pumpkin Pancake mix muffin recipe (it’s on the back of the box!). Each muffin has 8g of protein, which is the perfect small bite to have with my planning period coffee at school!
But this recipe is still our tried and true and I always have the ingredients on hand in the fall. They make me so happy!

Ok, so I’ve already made these twice in the past few weeks. I found cream cheese chips the other day and decided to add those instead of chocolate and they were great! Took them to a tennis match and everyone loved them! And….side note….my family knows that almost everything I make is a recipe I found on mix and match mama!😜

I was given this recipe years ago!!! We make them as a quick snack or breakfast.
Our recipe has a half cup of water. But if I have on hand I use apple cider or Apple juice! We will sometimes put whipped cream cheese on top. They are good plan or with raisins.

This is the first recipe of yours that I ever made (and I have made many). They are my family’s favorite muffins. My daughter is a freshman at SFA this year. I made a batch for her to take back to school with her when she came home this past weekend.
