Happy Wednesday, friends!
I don’t know about you, but I’m in “full fall” mode right now which makes it the perfect time to once again share my family’s FAVORITE fall recipe (let’s be real, probably their favorite recipe of all time!) these 3 INGREDIENT PUMPKIN CHOCOLATE CHIP MUFFINS!
These are easy enough that even my littlest kiddos can whip them up independently (with just a little help from me with the oven).
Plus bonus, you can easily tweak them and make them GLUTEN-FREE too!
Grab those three ingredients and get in the kitchen.
It’s fall, y’all! xx

3 Ingredient Pumpkin Chocolate Chip Muffins
- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Yield: 1 dozen 1x
Description
It only takes three ingredients to make these delicious muffins! There’s a little bite of autumn in each and every one.
Ingredients
- 1 box of Spice Cake Mix
- 1 (15 oz) can of pumpkin (I use Libby’s)
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350 degrees.
- Line a 12-count muffin tin with cupcake liners.
- In a mixing bowl, combine cake mix with canned pumpkin and work it with a spoon. The batter will be pretty thick. Once the batter has been combined, stir in your chocolate chips.
- Fill your muffin liners 2/3 of the way full and bake about 15 minutes.
- Remove from oven and let cool in the pan 5 minutes before removing.
Notes
Let’s be honest here…spread some store bought cream cheese frosting on these babies and you have yourself a cupcake. No oil, no eggs, no guilt, right? After they cool, you can also pop them in the freezer inside a freezer bag and then just remove them on busy mornings. About 30 seconds in the microwave and breakfast is ready to go. One more little tip, substitute chocolate chips with either butterscotch or cinnamon for a whole new taste experience! To make these gluten-free, simply use a gf yellow cake mix and add in one tablespoon of pumpkin pie spice.

Is there a way you can make these g-free?!
Mix and Match Mama says
Yes! I have updated the recipe with the details. We have done it this way SO MANY times!

I can’t remember how many years ago I discovered this recipe but I’m so glad I did! My daughter came home from college for the first time a few weeks ago and I was able to send her home with a batch to share with her dorm friends. It’s not fall until we make Shay’s muffins!
Mix and Match Mama says
Without a doubt, these are the most frequently made muffins in my house!
Christy says
So if I don’t have spice cake mix, I can basically just use yellow cake mix + pumpkin pie spice??
Mix and Match Mama says
Absolutely!

This is always the first fall recipe I make every year. Delicious!
