Last May, I discovered the genius that was a cupcake made with Kool-Aid. I mean, seriously, there are just so many different ways that you can mix and match this method. In celebration of Valentine’s Day, I thought some cheery Cherry Kool-Aid Cupcakes would be the perfect treat for my loves. Easy and festive!
Shopping List
1 package white cake mix (plus the ingredients to prepare per box directions)
2 packets (.13 oz each) cherry Kool-Aid
1 can cherry frosting (see below for other options)
Conversation Hearts to garnish
Preheat oven to 350 degrees.
In a large mixing bowl, prepare white cake mix per box directions. Then using an electric mixer, mix in both packets of cherry Kool-Aid. Poor into lined cupcake tins. Bake 18-20 minutes or until toothpick inserted in the middle comes out clean.
Let cupcakes rest 5-10 minutes in the muffin tin before removing them to finish cooling completely. Frost cooled cupcakes with cherry frosting and garnish with conversation hearts.
Ok…I have found cherry frosting at all of my local grocery stores. However, if your store doesn’t carry cherry, you can either frost your cupcakes with another flavor (lemon would be delicious!), you could use another Kool-Aid and then another frosting flavor (like strawberry Kool-Aid with strawberry frosting) or you can make your own cherry frosting by stirring in another packet of cherry Kool-Aid into a can of vanilla frosting (so you would need to buy 3 packets total). No matter how you frost it, you will be in love with this simple and fun way of preparing cupcakes.
And trust me….this will be a method I’ll continue to mix and match for a long, long time.

So I made these the other day! Have you tried it with the kool-aid cherry packet with the plain frosting? Of course our grocery store didn't sell cherry frosting. It turned out way too sweet for mine and hubby's liking, but the kids loved them! I think regular pre-made cherry frosting would have been better. I'll try something chocolate next time, any recommendations?? And I've made 5 meals so far from your blog and everything has turned out so wonderful!!! Even my 4 & 1 year old eats it all!! Super easy and delish at the same time! I have 3 more lined up for this week!!! Thanks again for making my life in the kitchen that much easier!!
