I had Girls Night at my house a few weeks ago and wanted a sweet dip to serve. I wanted something easy, something I could make in advance and just pop in the fridge and I wanted something my girlfriends would love. So…I came up with this Hawaiian Dip that did not disappoint. Out of everything I served that night, this dip was raved about the most. Every bite is like a bit of the tropics.
Shopping List
2 (8 oz) packages cream cheese, softened
1 cup powdered sugar
1 (14 oz) can Eagle Brand Milk
1 (15 oz) can crushed pineapple, undrained
3 cups shredded, sweetened coconut
Toasted pecans to garnish, optional
Graham crackers for dipping
Using your electric mixer, combine cream cheese, powdered sugar and Eagle Brand until all incorporated. Stir in pineapple and coconut. Sprinkle toasted pecans on top.
Cover and refrigerate at least two hours up to overnight. Remove from fridge and serve with graham crackers.
Simple, right? The coconut lovers in your life are going to love you for this!

Just made this and it turned out kind of soupy. Is it supposed to be the consistency of pancake batter? I followed the instructions to a T, so hoping that a night in the fridge will thicken it up, but kind of worried it's not going to thicken enough for a dip.
