Bundt Cake #89: Root Beer

You know how I love to put a soft drink in my cake, right?!  I’ve done a  Dr. Pepper Cake and a Chocolate Cherry Coca Cola Cake  before, but my favorite soft drink is a good old fashioned Root Beer.  So, this cake pays tribute to an original   
This time, I used a yellow cake base (as opposed to chocolate), and I really think it let the Root Beer flavor really shine.  Add a scoop of ice cream to the side and you have yourself a Root Beer float…well, sort of :).
Shopping List
1 box of yellow cake mix
2 small boxes of instant vanilla pudding
1/2 cup of veggie oil
2 cups Root Beer, divided
 4 eggs
3 cups powdered sugar
1 stick butter, softened
Preheat oven to 350 degrees
Grease (I use Pam) a 10 inch bundt pan
In mixing bowl, combine cake mix, puddings, oil, 1 1/4 cups Root Beer and eggs with electric mixer.  Pour batter into prepared pan and bake 40-45 minutes or until toothpick inserted comes out clean.
Let cake rest on counter in pan 10 minutes.  Then, invert cake onto serving plate to finish cooling. 
To make the frosting, beat butter with powdered sugar and a few splashes of Root Beer.  Add more powdered sugar if the icing is too thin and more Root Beer if it’s too thick.   
Spread on cooled cake.

    Rootbeer… yum. And since all Brazilians hate root beer and my husband won't eat anything with its flavor I would get to eat the whole thing by myself. SCORE! 😉
