I love a good dip. Like, I could make it a meal. Just dip.
I found this recipe on Pinterest (of course!) from The Sunny Side of Life and made it twice in one week it was so good. It’s hot, it’s kind of spicy, it’s delicious with chips. Perfect for football watching parties!
Shopping List
2 cans of sweet corn (drained) or about 3 cups of frozen corn kernels
2 jalapeno peppers, seeded and chopped
2 green onions, chopped
1/2 cup sour cream
1/2 cup mayo
1 cup Monterey Jack cheese, shredded
1 tablespoon chili powder

Preheat oven to 375 degrees.
In a large bowl, mix together all of your ingredients. Pour into a greased (I used Pam) 9×13 baking dish.
Bake for about 20 minutes or until slightly browned and bubbly.
Serve with tortilla chips.
If you want your dip less spicy, only use one jalapeno pepper :).

I love this recipe, Shay. I have a similar one, except I make it cold. It's basically the same ingredients except I use a can of corn with the peppers already inside, and cayenne red pepper instead of chili powder. Try it sometime — it's what my husband's family always requests that I bring to gatherings!!

For some reason when I look at this I feel like I want to add cream cheese…am I crazy? Would it balance the hot? Maybe I just have another recipe in mind….
