It’s February! How did that happen? I’ve been saying for months that February was going to be my month. As much as I love, love, love the fall and holiday season, it is always so busy with little downtime. And then there was January…wedding showers, Smith’s birthday, a trip to California and that giant wedding…I need a relaxing February (because in March, I will pack up my rent house and prepare to move to our new house!). I’m going to need a relaxing May too…
This week, I’m doing all recipes that are Fancy Without The Fuss! In anticipation of Valentine’s Day, all of our suppers this week will look fancy but they’ll be simple and perfect little weeknight meals. Fancy Without The Fuss…I’m that kind of girl.
The Coach’s Stack is all about presentation, right? But it’s really just toast, mashed potatoes, a meatball, BBQ sauce and some French Fried Onions. My hubby loves this dinner!!
My Turkey Chili over Cornbread Waffles is really simple! You let the chili cook all day in the slow cooker and then just whip up some quick waffles right before you eat. Such a fun way to eat traditional chili!
These Lasagna Rolls look so fancy but they’re the perfect little weeknight supper (and a great alternative to spaghetti and meat sauce!).
I could eat my Mexican Risotto every night. It’s that yummy! You can serve this as a vegetarian entree (just replace the chicken stock with veggie stock) or alongside a nice piece of steak or chicken breast.
Don’t let a stuffed pepper fool you. They might look a little daunting but they’re really simple and quick cooking for busy weeknights. I particularly love my Meatball Stuffed Roasted Red Peppers. Yum!
And this cake is just sexy. Can a cake be sexy? I don’t know. But if I were ever going to call one of my 100 Bunt Cakes sexy, this Dark Chocolate Raspberry would be the one. Perfect for Valentine’s Day and definitely fancy without the fuss.
And then there is my Oreo Chocolate Trifle. Need I say more?
And my Valentine’s Blondies will have your sweethearts swooning.

I made the spicy corn dip yesterday but it was really running and I let it cook for 30 minutes. Do you use light mayo and light sour cream? I think that may have been my problem. It was really good and wasn't running after sitting out for an hour.

I never use anything light or fat free unless specified (which is rare). That was probably the problem!

I, too, made the spicy corn dip for Super Bowl this weekend and it was deeeee-licious!!!! I've made the chili and cornbread waffles before too….another winner. Must try the lasagna roll ups, that's too fun 🙂
