Meal Planning Monday #35

In honor of Cinco de Mayo, I am giving you a Mexican inspired menu for the week.  Don’t worry…I have a little something for everyone and your entire family will be pleased!  
Everything is simple, everything is delicious and everything is a nod to Cinco de Mayo!
My Taco Pasta looks like regular spaghetti and meat sauce but tastes a little like a taco.  It’s the perfect marriage of flavors!
BBQ Baked Chicken Tacos are full of yummy BBQ flavor but wrapped up in a crunchy taco shell.
Yummy fajita steak and peppers make my Mexican Paninis the perfect quick supper!
A Sloppy Joe that tastes like a taco…my Taco Joes.
Mexican Chicken Chili cooks up quickly in the slow cooker and is always a crowd pleaser!
I turned the very popular Tres Leches dessert served in many Mexican restaurants into my Chocolate Tres Leches Bundt Cake.  Read the recipe people…it will be impossible for you not to love it!
And my bonus recipe for the week…Spinach Guacamole.  Yes.  It’s so good!

    Made the BBQ chicken tacos tonight and we loved them! I added traditional taco toppings and cilantro. Thanks for such a delicious and easy meal!!
