Eeks! It’s Monday (again). This day just keeps sneaking up on me…every seven days.
I don’t know about you guys…but this time of year, we are just surviving. It’s the end of school, the end of tee ball, the end of dance, the end of everything routine. We are in survival mode over here for just a few more weeks and then summer will be here. Whew.
Speaking of summer, we’re going to relax this summer. I’m working on eliminating unnecessary commitments in my life. I want to eat outside, swim every day and really enjoy the next 3 months with my family and friends. I will be blogging more about my summer plans later…but for now, here’s what we’re eating this week. A little from the grill, a little from the slow cooker and a lot of yumminess all together. Enjoy!

I love my Salsa Chicken and Shells because it has great texture and crunch (Chicken mixed with those yummy French Fried Onions). My kiddos looooove this pasta supper! I love how easy it is :).
Meatloaf Joes are one of Andrew’s very favorite meals! Whenever we need something quick and simple for supper, I turn to a Sloppy Joe. This version is such a crowd pleaser!

My Lemon Bundt Cake is my second favorite bundt cake of all time (out of my 100!). I love this cake. Love it. So easy and so yummy…you need to make this cake this week :).
Funfetti Triple Chip Bars are my bonus dessert for the week. These bars are the perfect combination of every bar you’ve ever eaten. Trust me…they’re perfection.
Walnut Butterscotch Oatmeal is my bonus recipe for the week. Stop having boring oatmeal for breakfast, I have so many options to make simple oatmeal more satisfying.
