Happy Monday friends! I don’t know about you…but we have a really busy week ahead. Kensington is having a birthday party, family is coming into town to stay with us, and the kids start tennis…I don’t have time to fuss with supper, so everything we have this week needs to be quick, yummy and simple.
This Baked Pizza Pasta Casserole is a favorite at our house. Both of my kiddos LOVE it!
If you need a slow cooker meal this week, you’ll love this Mexican Chicken Chili…throw everything in the slow cooker in the morning and dinner is ready when you are later that night.

My Easy Enchilada Casserole is what I call a Monday Night Meal…it’s perfect on those Monday nights when you’re tired, in a hurry and just want dinner on the table fast.
Brisket is a staple at our house (especially during the fall!). It’s such a simple cut of meat to buy, throw in the slow cooker and feast on at supper. My Apple and Onion Brisket would be yummy my smashed sweet potatoes on the side.
Our bundt cake this week is my Toffee Crunch. I seriously love this cake. Love. It. (And it’s so easy too!!)
Easy Apple Turnovers are perfect for a little dessert or a quick breakfast (you could also use jam, Nutella or cherry pie filling instead!).
If you need a little something to snack on while watching football, you should whip up my Moose Munch :). It goes perfect with cozy sweats and a college game.
