Nevertheless, here we are and here we go…it’s Meal Planning Monday!
My Turkey & Spinach Lazy Lasagna has all the bells and whistles of a Chicken Florentine Lasagna but made with ground turkey and ready in about 30 minutes.
So, my Apple & Onion Brisket is cooked in the slow cooker all day with cider (or apple juice) and then served along with my quick and easy smashed sweet potatoes (recipe on same page). Throw it in that morning and be ready and waiting for a delicious supper that night!

My Maple Crusted Chicken is always a staple at our house this time of year. I coat the chicken breasts in a little Bisquick, bake it up and then serve it with a drizzle of maple syrup. It’s a cross between chicken and waffles and chicken parm…and it’s always a hit!
And finally, end your week with my Beef & Ale Shepherd’s Pie. This is just a bowl of hearty goodness. My hubby liked it, my kids liked it, I liked it and it was really quick to assemble too. Win, win supper that just tastes like fall in a bowl.
