It’s Monday.
The Monday after Halloween weekend.
I feel like this…
…sigh.
Here’s hopin’ that second cup of coffee kicks in really soon!
Happy Monday friends!
I mean, I’m not even playing around here. It’s a Frito Pie Casserole…because sometimes, you just gotta.
Andrea’s Pulled Pork is a staple in our house. Three ingredients, one slow cooker, dinner is done…and delicious! Make a double batch because later in the week, I have a great way for you to use the leftovers!
Oh friends, you have to try my Chicken & Quinoa Soup! Everything goes into the slow cooker first thing in the morning and then by suppertime, you have a big bowl of goodness ready and waiting on you. My kids ate this up too! Delish!
Oh me oh my! My BBQ Quesadaillas are one of my very, very, very favorite things to eat. I mean…I could eat these for breakfast, lunch and dinner. This is the perfect way to use up your Pulled Pork leftovers.
And wrap up your week with my Mexican Minestrone. Mexican Minestrone on a cold November night? Yes.
Our bar this week is Salted Caramel Bars. Chocolate base, cream cheese top with just a touch of salt. You will love it!
Since November is pie season in our world…I have pie on the brain! My S’mores Pie would make a great addition to your Thanksgiving table or your weekend plans.
And one last recipe for your week…my Pumpkin Bread Pudding is what you need for breakfast this week. Saturday morning with Pumpkin Bread Pudding and coffee…perfection.
So, there you have it friends! Meal Planning Monday for the first week of November.
Happy Monday!

Hi Shay…
The BBQ pork looks amazing but have you ever made it without onion? I'm wondering if it drastically changes the flavor. My husband hates onion so it makes my job tricky
Mix and Match Mama says
You can totally leave out the onion!! Enjoy!

The quesadilla was to die for! My husband said it's something you would order in a restaurant! We used the pulled pork we made the night before.
