4 eggs
1/2 cup butter, melted
1 box of powdered sugar (about 4 cups)
8 oz package of cream cheese, softened
2 bananas, mashed
1 cup of butterscotch chips
Preheat oven to 350 degrees. Grease (I use Pam) a 9×13 inch baking dish.
In bowl, combine cake mix, 2 eggs and melted butter. Spread in bottom of pan as your “crust” layer.
In a second bowl, beat the powdered sugar, remaining 2 eggs and cream cheese until smooth with an electric mixer. Beat in your mashed bananas. Don’t worry if it’s slightly lumpy, that’s okay! Stir in your butterscotch chips. Spread this mixture on top of crust mixture.
Bake 35-40 minutes until edges are brown and center set (it will still be slightly wobbly in the middle).
Cool on counter 30 minutes, then refrigerate 2 hours up to 2 days.
These bars are insanely delicious! Your friends and family will love them!

It was 50% off everything at the Walmart (since they are closing) and I thought about you when the guy ahead of me was getting about 25 boxes of cake mix (and crushed pineapple)… perhaps he was going to make pineapple bars?

I love banana bars, and the added butterscotch makes these even better! Today, Amazon delivered your cake cookbook; actually two cookbooks. One for me and the other for my sister. I will be looking through my copy later today.

Hi Shay. I followed the directions and baked for 40 minutes. The middle is still mushy and moist even after cooling. Any ideas? The outside looks well done 🙂

These are very moist in the center…even wobbly. You might have needed to bake them another 5 minutes, but they'll never be super firm.
