We are cobbler people.
We love a cobbler in the winter as much as we love it in the summer. We just love it. For this one, I used fresh strawberries because they were juicy and beautiful at my market and then frozen peaches (because our peaches aren’t in season until later in June). So, you can totally mix and match too. Use one fruit, use two (heck, use three if you want!). Use some frozen, use some fresh…whatever you have, whatever you love…use.
This recipe is one you’ll come back to time and time again.

This recipe serves four to eight (depending on the size you serve).
Shopping List
3 cups of chopped strawberries
2 cups of frozen peach slices
1/4 cup sugar
2 tablespoons cornstarch
1 cup of oats (not quick cooking)
1/3 cup brown sugar
1/3 cup flour
1/2 cup butter, chopped into small pieces
Preheat oven to 350 degrees.
Use either a cast iron skillet or a 9×13 baking dish.
In a mixing bowl, add your chopped strawberries, peach slices, sugar and cornstarch. Toss everything until it’s all mixed together. Pour this mixture across the bottom of your cast iron skillet (or across your baking dish).
Now, add your oats, brown sugar, flour and butter to your mixing bowl and toss together. Sprinkle this mixture down across your fruit mixture.
Pop your skillet in the oven and bake 22-26 minutes or until the cobbler is bubbly and slightly browned on the edges.
Remove from oven and serve immediately (maybe with a scoop of vanilla!).
