Okay…here we go…we’re back in business.
Today, is the first day of school.
No more sleeping in, lazy mornings, poolside lunches, staying up late…we’re back to the routine. So, with everything we have to do this week to get in the swing of things, dinner just can’t be complicated. Here is my easy (and delicious) Meal Planning Monday for us…because it’s going to be hard enough waking up early and going to bed on time…so who has time to fuss with a complicated supper? #notme
BBQ Ranch Chicken Sandwiches for the win this Monday. This slow cooker supper is going to knock your socks off!
We love us some meatballs at our house. These Spinach and Swiss Meatballs over Quinoa just cannot be topped!
Teriyaki Shrimp Pasta. Noodles and shrimp…my kids’ favorite things!
Ahhhh…Mexi Beef over Rice. We serve it over rice but you can serve it over whatever you like (quinoa, polenta, pasta, lettuce…whatever makes you happy!).
My B.L.A.T. Burgers for your Friday. These yummy turkey burgers have all of the flavors of a BLT but with my avocado mash on top…because let’s face it, avocado makes everything better.
If you’re looking for something a little sweet…my Autumn Applesauce in the Slow Cooker makes an excellent snack, dessert or even breakfast.
And speaking of breakfast…
I don’t know if I’ve ever made a breakfast casserole for my taste-testers (a.k.a. the people in my Sunday school class) that was a bigger hit than this one (and they’ve tried approximately 4 billion). My Bacon & Tot Casserole is FANTASTIC! You must make it this weekend. Promise me you will 😉 .

I notice you use ‘bottom buns’ for many of your meals…..what do you do with the ‘top’ buns?
