It’s the first day of spring!
I don’t know why…but I’m more excited about spring this year than usual. I have already been working on my garden, I’ve ordered me a swimsuit or two and I have my summer plans all lined up. Bring on the warm weather and lighter fare…I’m ready!
As much as I love the hearty recipes of fall and winter (I mean…it’s the best, right?!), I always look forward to the fresh and light food of spring and summer too. In honor of the first day of the season, a spring menu for your week. Happy Monday!

Do you know what a Hummingbird Cake is? In the South, it’s a staple in the spring. You will not find a more moist cake than this. Promise.
And a light little breakfast for your spring morning? My Dutch Baby Pancake. There is just a tiny bit of lemon in there that takes this easy dessert to a extra yummy level.

Do you think the salmon would be good with guacamole too? I just used my avocados to make some! I’ve never thought to combine the two, but you have me thinking it might work!
