It’s October!
Eeeeeks! I just love this month.
Happy October friends. Here are five simple suppers to make your week a little easier. Enjoy!
Start your week with my Beef & Rice Skillet Supper! It’s really easy to pull together on a weeknight, and requires only one pan to clean when you’re done.
My BBQ Pork Tacos are simple because the pork cooks all day in the slow cooker. You just assemble and enjoy!
My Italian Chicken Noodle Soup is what you need for your weeknight. It’s a bowl of cozy.
My Pumpkin & Sausage Pasta is a yummy way to enjoy pumpkin in a savory dish. This truly is one of my very favorite pasta recipes. We eat this every season, and it’s always a favorite with my family!
My kids always love sloppy joes for dinner, so my Sloppy Joe Pot Pies are a huge hit!
And I couldn’t wrap up this week’s Meal Planning Monday without a little more pumpkin. My Chocolate Chip Pumpkin Bars for the win this week. They are incredible. Like seriously, they’re divine.
And if you’re looking for something really simple, my No Bake S’mores Bars fit the bill! All the yummy s’mores flavors without turning on the oven (or fire pit!).
And finally, my Tex-Mex Potato Breakfast Casserole. This makes the perfect breakfast or even supper too (just add a green salad and you’re good to go!).

I made your beef and rice skillet supper last night and it was SO good! We kind of made nachos with it, but tonight I’m mixing it with some romaine for a taco salad type thing. Thanks for sharing! I do have 3 year old twins that it was a little too “spicy” for (we’re in Alabama so they aren’t being raised on authentic mexican food…bummer), but I think I’ll cut the cumin in half next time and use mild rotel instead of original…and if you’re reading this and concerned about the level of spiciness…it’s not! But my kids say cheese dip is spicy sometimes. 🙂 Throwing this in the monthly rotation!!
