I’m hooked on your chicken enchilada soup right now. I use lentils instead of quinoa and it’s SO good!!! Last night I had some leftover carnitas so I mixed all of the ingredients in the crockpot and let it cook till the lentils were done, and then added the pork. It’s delicious! I’m so excited to eat it for lunch all week! So thank you!!!

Wanted to make your lasagna so went to the store today. This was the first time I’ve ever gotten No Boil lasagna noodles. It says to add 1/2 c. water for every 5 noodles. Do you add water to your meat/tomato mixture? Also your recipe says to bake uncovered but the instructions on box says to cover with foil. Help! I’m not sure what to do.

I do not! I found they work just find and the lasagna sets better when there isn’t the extra liquid in the sauce.
