I mean…Pasta Fagioli just sounded like the right way to kick off the new year!
My BBQ Chicken Tacos are so simple to pull together because the chicken cooks in the slow cooker all day and then at night, you just assemble. I used flour tortillas, but you could easily swap them for whole wheat, gluten-free or corn.
I love this Portobello Pasta recipe for many reasons. First, you can make it vegetarian but removing the sausage and using twice the amount of mushrooms instead (easy!). And second, you don’t have to serve it over pasta. You can serve it over rice, quinoa…whatever grain you love most. Easy switches for a yummy supper!
‘Tis the season for citrus! My Orange Marmalade Chicken Sandwiches are the perfect nod to this yummy season!
Make my Chicken Enchilada Quinoa Soup tonight. Like seriously, make it now. This finishes off more like a chili than a soup (because the quinoa plumps right up!) and is insanely delicious. Plus bonus, the whole thing comes together in the slow cooker, so it’s SO DARN EASY!
I don’t know why…but my Butterscotch Banana Bars just sounded really good this week!

Hi. I love your blog! My friend told me a “life changing” cheat to shredding cooked chicken. Are you ready for this… you put it in the stand mixer with the blending blade and in a minute or two it’s shredded! I was astounded! You can even do it while it’s hot! Amazing! Enjoy. Tina

Made the BBQ chicken tacos tonight and they were a hit! So easy and so yummy! Even my picky eater had seconds. And the pickles as garnish- wow. Never would have thought to add them but we loved them. Thanks for the recipe!
