So, I’ve said this a million times…but Sloppy Joes are ALWAYS a favorite at my house. Want to hear something crazy? We have started to TRIPLE the recipe when we make it because my kids want all the leftovers for their school lunches. This time of year, I like to make suppers with a spooky twist (like my Brunswick Stew, Spooky Spaghetti and Ghoul-ash), so on this night, Kensington and I cut up strips of pie dough and put them across individual bowls of Sloppy Joes for a Mummy Meat Pie (her title 🙂 )! My kids thought this was such much fun!!
An easy (spooky!) twist on a weeknight favorite.
Shopping List
1 pound of ground beef
Extra Virgin Olive Oil
a nice pinch of both salt and pepper
1 (6 oz) can of tomato paste
1 (8 oz) can of tomato sauce
1 (14 oz) can of diced tomatoes
3 tablespoons of Worcestershire sauce
1 tablespoon mustard
3 tablespoons brown sugar
1 box of refrigerated pie crust, thawed to room temp, cut into long pieces.
In a large skillet over medium-high heat, brown your ground beef in a drizzle of olive oil. Once browned and crumbly, add in a liberal pinch of both salt and pepper before transferring to your slow cooker. Once the browned ground beef is in your slow cooker, add in your tomato paste, tomato sauce, diced tomatoes, Worcestershire sauce, mustard and brown sugar. Stir and then cover with the lid and set to low for 6 to 8 hours or high for 3 hours.
When you’re ready to serve, preheat your oven to 400 degrees.
Scoop out your sloppy joe mixture into oven-safe bowls or ramekins. Take your pie crust pieces and crisscross them over the tops of the joes. Pop this in the oven for 10 minutes and you’re done!
