Happy Monday, friends!
I have one post for you today because Andrew and I are headed out for a quick little getaway. I’m sure we’ll be posting on Instagram as we travel, so hop on over there to follow along. I will be posting all week, so come on back tomorrow too. In the meantime, here’s what you need to make for dinner this week!
An easy weeknight Shepherd’s Pie to kick off your week…because anything topped with potatoes is delish, right?!
Grab a bag of meatballs from the freezer section and make this simple slow cooker Mexi Meatballs over Rice on Tuesday! Super, super, super simple!
Andrea’s Baked Potato Soup is always calling my name on cold winter weeknights!
My Simple Sausage Peppers & Onions can be served by itself or alongside pasta or rice. It’s way versatile and way yummy!
Okay, have you tried my Chicken Enchiladas Verdes??? They’re easy enough to make on a weeknight, but fancy enough to serve to guests this weekend too!
For breakfast this weekend, you need to whip up one of our favorite pancake recipes…
…my Dutch Baby Pancakes are perfect for Saturday mornings!
I hope you all have a wonderful week!! Don’t forget, if you blog, this week is WHAT’S UP WEDNESDAY. Sheaffer, Mel and I were laughing so hard because this last month was our first time to do it without Mel and well, it was a disaster. We were having graphic issues, we couldn’t get our link up to work…it was such a mess. So, we’re going to try again this month or else Mel has to come out of retirement 😉 . Here is our new graphic for you to use on your post…
…and we’ll try and have the link up working correctly too. Our bonus question of the month is what is your favorite BOARD GAME to play with your kids?
I will be back here tomorrow, so stop on by! xo

I’d like some chicken enchiladas with a dutch baby on the side, please! 🙂

I made the sausage, peppers and onions recently and it’s a new favorite! Honestly…The moment I poured the tomato sauce in, I regretted it and thought it was going to ruin the sausage flavor for me. (Kind of like eating a steak with ketchup) But I was pleasantly surprised! It was sooo flavorful and delicious!

I’ve made your Sheperd’s Pie for my family before and they were crazy for it! It’s delicious!!

I read your blog daily and especially love the stories about your travels. I’ve got two trips coming up myself, but the truth is…I’m afraid to fly. I’m truly terrified! Any heartfelt advice from someone who is a seasoned traveler? Please help.
P.S. Enjoy your trip!

Oh my goodness! I totally think your fear is more common than people admit. Have you ever flown before? Maybe your doctor can give you some ideas to help you cope. I really hope you’re able to overcome it. Thinking about you!!

Debbie…Christian music singer, Natalie Grant, is terrified of flying (has anxiety attacks) and has to fly all.the.time. I follow her insta stories and she’s said that she has specific flying music that she listens to and certain scriptures she uses to help keep her calm. It’s something she talks about often, so she may have more info on her website or something.?
Shay, I came here to ask about your Tomato Basil soup.☺️ I made it this week and OH MY! It’s sooo good! When you freeze it, do you add the half and half beforehand or wait until thawing? Thanks in advance!
Mix and Match Mama says
I typically always freeze the leftovers (so it’s already been added!).

Your enchilada recipe reminds me of this go-to recipe I found in a SL magazine. So good and easy! Thought you might like it, too.

I just have a quick question. I live in Arizona and we go to Mexican restaurants fairly often. I love enchiladas! When I order them, they are always made with corn tortillas. Yours look so yummy and I’m wondering if I could substitute the flour tortillas with corn tortillas. Every “Shay-ipe” that I have tried is a “home-run”!! I love baseball, too! 🙂
Mix and Match Mama says
Totally! Here in Texas, you can totally use either 😉 . Use whatever your family loves!!
