Friends! It’s almost MAY!!!!!
I look at May and September the same way that I look at January…as a new beginning. Is that weird? I see the whole warm Summer ahead of us and think it’s a brand new chapter. Now, my brand new chapter is starting off rainy instead of sunny, buuuut I’m still excited. I hope you’re excited too because I have a simple little menu for your week. Easy weeknight recipes plus one of our favorite sweet treats to make your Monday shine!
Happy Meal Planning!
Kick off your week with a chicken dinner. My Baked Lemon Chicken & Rice is on the table in no time flat!
Chicken Chipotle Fettuccine for the win this week! This recipe is full of flavor but not too spicy for the kiddos.
My Grilled Cod with Avocado Pea Mash is a wink and a nod to British fish and chips with mushy peas. Your kids won’t even notice the peas in guacamole…I promise.
Speaking of British pub food, I had this yummy beef and ale recipe in London a few years ago…they called it a Shepherd’s Pie on the menu, but it’s a lot like a pot pie. My Beef & Ale Shepherd’s Pie gives me all the cozy feelings for supper.
On Friday you need to grill up my Mushroom Burgers. Hello?! Doesn’t that look divine???? I love me a burger night!
Wrap up your week with my Pink Lemonade Bars. Because…don’t they just scream MAY?!
Here’s hoping you have a fantastic Monday! xo

Hi shay!
We are having our close family friends come over tomorrow and wanted to make a chicken dish. We were trying to decide between your chicken with 40 cloves of garlic and your lemon poppyseed baked chicken. Which one would you make if you were choosing between them. They both sound so good. Also what side would you serve with the one you would pick. Thanks for all the amazing recipes and advice!

Yum!!! Okay, this time of year, I would pick the poppy seed one (it seems more spring!), but garlic chicken never lets me down either!

Hi have you ever tried mixing crushed up Oreos into your brownies? We loved your brownies with the butterscotch chips so I tried mixing finely crushed up Oreos into my brownie batter and they were amazing! Just thought I would let you know!
Love Kate?
