My Baked Lemon Chicken & Rice has all the bells and whistles of a big family supper but in one pot. Who doesn’t love cleaning just one pot when it’s all said and done?!
We love Shepherd’s Pie over at our house!! Ground beef, a few veggies and then top it with mashed potatoes?! Yes, please!

The Shepard’s Pie looks perfect for a his and her meal at my house. I’m trying to do low carb and I can do half mashed potatoes and half mashed cauliflower. It should work?!!

I know you may be overwhelmed with choices for GF. But I did want to share a company my family loves. We actually found it because of my daughter with special needs. I think it would not only benefit K, you all would really love it. Between the pancake mix & muffins, we order frequently.

The chicken and rice has wonderful flavor and I loved the clean recipe overall….but are you using quick cooking brown rice in your recipe? Because I have never had brown rice cook in 20 minutes and mine was far from done in the 20 min time frame. I think next time I would par boil the rice. Just wondering how you got yours to cook that quickly or what rice you used. I used short grain brown rice from Lundberg.
