Happy Monday, friends!
Whoa! Between the Manda Strong Foundation Gala, a volleyball tournament and a baseball one too, my brain is SPINNING right now. Anyone else sometimes excited for Monday just so that you can hop into some sort of “routine”?!
This week, I have simple suppers for your whole family to enjoy. Happy Monday, y’all!
An easy weeknight Shepherd’s Pie to kick off your week…because anything topped with potatoes is delish, right?!
Grab a bag of meatballs from the freezer section and make this simple slow cooker Mexi Meatballs over Rice on Tuesday! Super, super, super simple!
Andrea’s Baked Potato Soup is always calling my name on cold winter weeknights!
My Simple Sausage Peppers & Onions can be served by itself or alongside pasta or rice. It’s way versatile and way yummy!
Okay, have you tried my Chicken Enchiladas Verdes??? They’re easy enough to make on a weeknight, but fancy enough to serve to guests this weekend too!
For breakfast this weekend, you need to whip up one of our favorite pancake recipes…
…my Dutch Baby Pancakes are perfect for Saturday mornings!
I hope you all have a great start to your week! See you tomorrow! xo

Have you tried making your dutch baby pancake with gluten free flour. Does it taste the same? Are there any other subs I need to make to make this gluten free?

I haven’t attempted that one GF yet!

Have you tried making jambalaya in the instant pot yet? If so could you post the recipe?
