Happy Tuesday, friends!
Okay, this isn’t even a recipe…it’s an idea.
Since we’ve all been home together, I would one hundred percent say that the number one thing we’ve been making for lunch every day are grilled cheese sandwiches with tomato basil soup. It’s quick, it’s easy, it’s filling and all of my kids love it. As much as I love making tomato soup from scratch, I can use the Trader Joe variety that’s gluten-free, add a little bit of Boursin cheese to it, and it’s on the table in about three minutes. Easy, easy, easy! (If you haven’t added the Boursin to your soup, it’s a game changer…it makes is super creamy!)
All of that being said…we like to jazz up our grilled cheese sandwiches and our favorite combination is adding pepper jelly (we love Trader Joe’s!), turkey pepperoni and cilantro from our garden! My kids say they taste like pizza!!
And just like that, our basic grilled cheese gets turned up a notch! Easy peasy (or should I say cheesy?!)!
So, that’s my little idea…pepper jelly, pepperoni and cilantro, WHAT DO YOU PUT ON YOUR GRILLED CHEESE?! My family will be eating them again for lunch today around 11:30, so ideas are very welcome 😉 .xo

The base is from Trader Joe’s and then I added cherry tomatoes and their Greek Feta Dressing!

We like to do Swiss, ham, and thin sliced apples! We’ll dip in honey mustard if we’re not having soup. We’ve also taken leftover pulled pork and added that to our grilled cheese using provolone. Can’t wait to try this version, sounds yummy!

The pulled pork is a favorite! My husband makes pork shoulder on our smoker often but it’s just us and our daughter so we’re always looking for fun ideas for All. The. Meat. Brisket grilled cheeses is amazing too!

I mix butter and parmesan cheese and spread on the outside for a crust. Inside is sharp cheddar and got cheese. Yum!

We love a good grilled cheese here too! And sometimes I change it up and put it on tortillas! You should try doing it pesto, mozzarella and tomato slices. I guess we are doing grilled cheese for lunch today! Thanks for the idea!

I grew up with the traditional grilled cheese, but my mom would also ask if we wanted a grilled peanut butter sandwich. That’s my comfort grilled sandwich! You can add a drizzle of honey to sweeten it up. Yummy.

When I was young my Mom would make Teenage Pizza. Bottom to top:
English muffin; peanut butter; tomato paste; mozzarella cheese—and broil!

My grandma used to make me grilled pb, banana slices, and honey. Sooo good! My kids are allergic to nuts, so we don’t have that anymore, but such yummy memories! My standard grilled cheese is swiss and cheddar with tomato and pickles. My kids just like plain grilled cheese, though.

I have ordered one at a restaurant a couple of times that has tomatoes, bacon and mushrooms. It was super yummy. I have also seen a recipe floating around pinterest for jalapeno popper grilled cheese.

Yup, this will 100% be lunch today! I usually add cheddar or mozzarella cheese to my soup but as I read this I added Boursin to my Shipt cart! My husband and I like to make ours “fancy” and put a little garlic and parm on the outside of the bread before we grill it up. We also have made it with sharp cheddar cheese, chicken (either lunchmeat or breast), and apple slices – soooo good! We enjoy us a grilled cheese with bacon too…because bacon. Last week we made it with havarti which was probably the best decision I’ve ever made – melts up so creamy, we added some carving board ham to it and it was perfect. The kids love when I take tortillas, add cheese, ham, etc… roll it up and grill them. They are fun little “grilled cheese dunkers” for their soup and they love adding what they want and rolling them up with me. (Can you tell we are big grilled cheese and tomato soup people LOL!)

Hi! Is that Trader Joe’s GF white sandwich bread or a different kind/brand. My daughter was just diagnosed with celiac about eight weeks ago, and we are trying to figure out this new GF world. I must have stood at the bread section for 15 minutes at TJ’s the other day trying to decide what kind to choose. Thanks so much!

We have been eating tons of grilled cheese as well! We use a slice of cheddar and a slice of Havarti cheese. Sometimes we add precooked bacon.

360 for 3 mins on one side, then bump it to 375 and do 3ish mins on the other side. You have to watch it closely! It can burn pretty quick by my gosh it is amazing!!! Crispy on the outside, soft and melty on the inside. Absolutely perfection!

Love this idea! In fact you inspired my daughter and I to have grilled cheese and tomato soup for lunch today…grilled cheese made with mayo instead of butter (sorry if that grosses you out!), Velvetta cheese slices and Campbell’s soup! It hit the spot!

I like to make grilled cheese using the pepper jelly from TJ as well, but what is even better is an apricot pepper jelly from Frog Hollow Farms in Brentwood CA. I first had it when I visited Fisherman’s Wharf a few years ago and brought home a jar. It is so good I practically licked that jar clean! Until this month I hadn’t been able to find it again. When I did. I ordered multiple jars. I make a grilled cheese using ciabatta bread spread with the pepper jelly. I usually use a combination of either smoked cheddar or gouda and some Velveeta for the meltiness factor. If I am feeling creative I will add some bacon or grilled onions…or go crazy and add both! I also usually add some garlic powder to the butter used on the outside. Well, know I know what I am having for dinner!

We love grilled ham and cheese! I put thinly sliced boarshead Black Forest ham in a skillet and grill until it gets some crispy brown on it. Put it on either marble rye or thick sliced French bread with havarti or Swiss. Butter the outside and grill on the griddle. I top with thinly sliced tomatoes, lettuce, pickles and Thousand Island Dressing!!! Yum!

Our local sandwich shop does pimiento cheese, bacon and blackberry jam. Beyond delicious! I just ran out of pepperoni but I will get some on the next grocery run since I’ve got pepper jelly on hand! Sounds so good!

Once I found a few brands I really liked, that part was pretty easy (easier than finding the right flour FOR SURE!). We buy mostly Trader Joe’s and Udi breads!

We are on a regular schedule in our house with grilled Caprese sandwiches. Fresh mozzarella, fresh tomato slices, fresh basil, salt, pepper and balsamic glaze drizzle.

I like a grill cheese sandwich with jalepeno cream cheese and american cheese together. I sometimes use mozzarella cheese on it too.

Try the Brady Street Sprinkle from Penzys spices. Butter the outside of the bread and sprinkle some on before grilling. Definitely a notch up from the plain grilled cheese my kids used to eat. They love it with the seasoning added!
