Okay, I promise this is the last Monday that I get lazy and only post once instead of twice, but I have enjoyed taking a bit of time off on the weekends and not looking at my computer and/or phone that much, so I hope you understand! It’s kind of like a staycation…in the world’s messiest/loudest/dirtiest hotel 😉 .

Mmmmmm! Start your week with my delicious (and easy!) Fresh Corn, Sausage & Parm Pasta!
Speaking of delicious, do you make shrimp on weeknights? We do all the time because it’s so quick! My Grilled Shrimp Po Boys are the perfect weeknight supper!
My kiddos request this supper all the time! In fact, it’s on our menu this week because Smith asked for it. My Simple Sausage Peppers & Onions is great by itself but is also tasty over rice, cauliflower gnocchi or pasta too.
Mmmmm! My Chipotle Chicken Fajitas are full of flavor…and just a little heat. You can scale it back for younger eaters, but seriously, they’re so good and easy too!
And nothing says a Friday in summer like Cheddar Beer Burgers! YES!!!!!!!!
And for dessert this week? One of my very favorite recipes. My Watermelon Cupcakes.

I recently made that corn, sausage, and parm pasta with one chopped zucchini and one chopped yellow squash instead of corn (I can’t eat corn kernels) and ravioli instead of fettuccine (just what I happened to have on hand). Oh my word!! Hubby and I [nicely] argued over the leftovers. Haha! ? So delicious, Shay!

I am totally with you on the Instant Pot…I haven’t developed a great relationship with it. However, I did ribs in it last week…they were delicious! So quick and easy! I did finish them off on broil in the oven with bbq sauce. Delish!

How have you cooked your cauliflower gnocchi? We have tried them twice- prepared two different ways. They both tasted like paste!

My favorite way is in the air fryer!! Toss a little EVOO on it with S&P and throw it in there about 10 to 12 minutes.
