Mmmmm…my Chicken & Rice Casserole hits the spot on busy weeknights. It’s a hearty and delicious casserole but simple enough for a spring evening.
Pineapple Teriyaki Salmon because…#itsspring!
And finally, for your Friday, it’s my Leek & Corn Shrimp Pasta. This recipe is always a good idea!
Speaking of corn, if you’re looking for a delicious breakfast casserole for your week…
…my Bacon Cornbread Breakfast Casserole is oh so delicious!
And for a little sweet treat, my Lemon Coconut Macaroons are perfect for spring! I would pick one of these over a plain old cookie any day of the week.

Hi, Where do you typically buy your Leeks? Trader Joe’s? Also do you use both the white and green part of the leeks? I’ve never cooked with Leeks Before!

I buy mine typically at my local grocery store. I use the entire thing. The trick with leeks though is to chop them first and then soak them in cold water to get the grit and dirt off. If you wash them whole, they’ll still be dirty.
