We’ve officially made it to the last week of August.
August is such a weird month for me.
It starts out on Nantucket in full summer mode and ends with me sitting next to a pumpkin scented candle in full fall mode (and yet, still experiencing summer weather). In the middle of alllllll of that is Back to School season and a lot of family dinners.
This week, I decided to select recipes my mom made for us growing up.
One meal plan with five suppers, one dessert and a breakfast recipe all reminiscent of my childhood.

RED BEANS AND RICE is the easiest way to kick off your week. My recipe includes both slow cooker and stovetop instructions. Simple!

There is no recipe more quintessential “my mom” than HER MEATLOAF! All of these years later and this is still my husband’s very favorite recipe. Even if you don’t love “other” meatloaves, try this one. It is always a hit!

My mom was a big fan of making quiche for dinner! Make my BACON & BROCCOLI QUICHE, serve it with a salad and dinner is done!

Brisket night was always a favorite of mine growing up because that meant I got a brisket sandwich in my lunchbox the next day at school. Try my EASIEST WEEKNIGHT BRISKET this week and use the leftovers for sandwiches too!
And finally…

…my mom still loves making CHICKEN TORTILLA SOUP. It’s always filling and flavorful without being complicated.
For dessert this week…

…try my BLACKBERRY & PEACH COBBLER! My mom’s go-to dessert is always a cobbler. They’re easy and way more “special” than just brownie or bar. Her own mom and grandmother always served cobblers for guests and special occasions too!
And finally…

…my mom has never been a savory breakfast person. She ALWAYS makes, bakes and selects a sweet breakfast option. BLUEBERRY MUFFINS were on repeat at our house growing up!

Meatloaf with creamy mashed potatoes is one of my favorite meals and Your Mom’s meatloaf is the VERY BEST Meatloaf ever. It is the only one that I make since you first posted it. Several years back when both of my sons were still in college and had weird class schedules, I would make the meatloaf in an individual loaf pan that I could make 8 mini meatloaves at a time and freeze them. All I had to do is take them from freezer and pop in microwave. They freeze really well and taste nice when heated back up. The boys would just add a mac and cheese cup and supper was ready for them when they got home. I also make the cobbler on repeat alot, especially during the fall and winter and blueberry just happens to be our favorite too.

Awe, we also love your mom’s meatloaf!! Definitely one of the meals my kids would put on their list of favorites. I should surprise them with Coach’s Stack soon! 🙂

My husband’ favorite meal is meatloaf and mashed potatoes too. I have a couple of different recipes I use and am going to try this one and see what he thinks. I have made your chicken tortilla soup many times and everyone I have served it to has loved it as well.
