We’re Nutella people over here. We put it on everything from our waffles to our ice cream sundaes. So, when Ashby, Madeley and I made these Nutella Oatmeal Cookies for Smith and Kensington after school…all five of us were pumped! (And Andrew was too when he came home from work!) Seriously easy and super delish!
This recipe makes about 1½ dozen cookies.
1½ cups all-purpose flour
1 teaspoon baking soda
1 cup of butter, softened
1 cup of brown sugar
1½ cups of Nutella
1 teaspoon vanilla
3 cups of oats (quick cooking is fine or traditional)
Preheat oven to 350 degrees.
Grease two cookie sheets and set aside.
In a mixing bowl, whisk together the flour and baking soda. Set aside. In a second mixing bowl, cream together your butter and brown sugar with an electric mixer. Beat in the eggs and then the Nutella. Finally, stir in the vanilla. Next, slowly add your dry ingredients into your wet ingredients and stir together with a spoon. Then stir in your oats.
Drop by the tablespoonful onto your prepared baking sheets.
Bake about 9 to 10 minutes or until the edges are just lightly browned.
Remove from oven and enjoy immediately or keep stored in an airtight container.
