It’s October! All year, I write and read recipes that are just so October. In fact, in my mind, there are two months that have specific recipes, October and December. Some things just are October foods. This week, we’re using the slow cooker, making soup, using all of our tortillas in the package (but in two different recipes) and incorporating pumpkin in both a pasta dish and a cake. Let’s dig into October…
Day 1: My Sausage and Corn Chowder is hands-down, without a doubt, my family’s very favorite soup. Period. It’s so simple and very versatile. You can use a pork sausage in this recipe or switch it up and use a chicken or turkey sausage…whatever please you. You will LOVE this soup!
Day 2: Leslie’s Mexican Casserole is a great One Pound supper. My friend Leslie made this for us one night and now, I continue to make it over and over again. Feel free to substitute ground chicken or turkey for the ground beef. This is a wonderful make-ahead meal too. Just keep the casserole in the fridge until you’re ready to pop it in the oven.
Day 3: Boneless Pork Ribs are a 2 ingredient slow cooker supper. Yes, only two ingredients! Talk about an answered prayer to a busy mom’s schedule!
Day 4: Sausage-Pumpkin Pasta is one of those October recipes I was talking about. We love, love, love this dinner! Trust me, you will love it too…I promise :).
Day 5: Crock Pot Chicken Tacos are a great way to end your week (and use up your leftover tortillas from Day 2!). Simple, quick, yummy…perfection for busy nights.
My Bundt Cake #59: Pumpkin Spice Latte is my absolute favorite bundt cake (and I have made 100 of them!). I can hardly wait until fall when it’s time to make this. It’s moist, it’s full of cinnamon and goodness, you will love it too! Make this one. Like today!
Candy Corn Cupcakes are such a fun way to celebrate Halloween! And this recipe is so simple too! Your kiddos will think these are so much fun!
Scarecrow Treats are like the best things ever! It’s part blondie, part Peanut Butter Krispies Treat, part Neiman Marcus Bar, and just plain fabulous! This is the kind of bar both grown ups and kids alike will love!

I usually am up for trying 1 or 2 of your ideas, but today's ALL look like ones I must try. Thanks for the new ideas. Question can you put other veggies in the chowder? I always like to try to add extra good stuff in my soup.

I was recently introduced to your blog and have loved it! The sausage and corn chowder has long been a fall favorite in my family. However tonight we tried the pumpkin sausage pasta! I was a bit skeptical but feeling brave! I'm so glad we tried it- we loved it! Thank you so much!

My slow cooker is 10 years old and was purchased at Target…and it's still great! I think it's important to get one that's oval (not round) for longer cuts of meat. Make sure it has a high, low and keep warm setting and that's about it! A basic one from Target or Walmart will work just fine!

I made the sausage and corn chowder and then today I made the Mexican Casserole. They were both excellent and quick and easy! The only thing I did different is that I added a little chicken broth with the milk to the corn chowder. Hubby suggested that the next time I make it to dice up some smoked sausage links instead. I may just do that! I had a Mexican casserole that I usually use, but yours was a bit different. We both loved it. It was very flavorful! Thanks so much for some quick dinners we will continue to enjoy.

The Mexican Casserole was a bit different than the one I make, so I decided to change it up a bit with your recipe. Yum! Very flavorful.
Hubby suggested that next time I dice up some smoked sausage links for the chowder. Thought that was a great idea for our next attempt.

I made your pumpkin sausage pasta tonight! I don't like pasta OR sausage, but thought I'd try something new for the rest of my family…and turns out I LOVED this recipe! So tasty, and the fact that it was quick and simple to put together didn't hurt!
