Last week, I shared my recipe for Lemon Gnocchi with Peas & Parm. Have you tried it yet? It works as a light lunch, vegetarian supper or side dish to your favorite protein (like grilled chicken!). I feel like the last week of April just calls for it.
Before the clock strikes summer, I want to post one more little soup recipe…my Chicken Enchilada Quinoa Soup is hearty enough to fall in the chili category and delicious enough that you might want to double the recipe.
Throw a Sheet Tray Supper in the oven on Thursday. Dinner (and clean up!) will never be easier!

I am obsessed with sheet pan dinners – so many varieties and SO FAST, which is necessary with two little kiddos and a working mama. And the ham and swiss croissant casserole looks amazing! Sounds like a Saturday brunch idea for this weekend.
