It’s Meal Planning Monday Tuesday!
I don’t know about you…but the last thing I want to think about this morning is what to make for dinner tonight. After a crazy fun weekend and knowing that the last day of school is this week…my mind is a million other places besides supper. That being said, there are five people in this world that count on me for food, so here’s what I’m thinking we (and you) might make this week.

I’m starting off my week with Crock Pot Enchilada Tacos. During the summer, we eat tacos like this at least once a week. Your kitchen stays cool because they’re prepped in the slow cooker, everyone can kind of build their own, they’re super family friendly and they’re ready and waiting on you when you get home. Love them!
Pineapple Lime Tilapia just tastes like summertime. We serve ours over wild rice and alongside roasted green beans.
Craving a little pasta this week? My Chicken Chipotle Fettuccine has loads of flavor but not a ton of heat.
Round out your week with my Jalapeno Popper Burgers. It’s a juicy beef burger with a jalapeno popper topping. Basically, it’s perfection!
My Key Lime Pie Bars for the win this weekend! These will disappear in a flash!
And your bonus recipe this week…
My Cheddar, Chive & Chile Breakfast Casserole. This plus coffee and your Saturday is perfect.

It depends on what it is. I always try and buy organic milk, eggs and meat. When it comes to produce, I don’t buy organic if I’m not eating the skin (like a banana), but if I am, I always try and make it organic.

Those recipes are all perfect for the first week of summer vacation! Quick question — my husband isn’t a fan of pineapple, but your tilapia recipes looks great. Any recommendations of a substitute or would you just omit totally? I’m sure it adds great flavor. Thanks so much!
