For some kids here in Texas, today school starts. For others, we still have another week or two. So, my meal plan this week is easy enough for those of you who are back in the swing of school…and those of us who are still enjoying the lazy days of summer.

My Chipotle Crab Cake Sliders are the perfect way to begin your week! Crab Cakes are as easy to make as a meatball. You just mix it all together, bake and serve. The chipotle gives these crab cakes extra flavor and a little heat…but not too much (so they’re kid-friendly!).
My Grilled Chicken with Blackberry Salsa just screams summer, right?! Lots of flavor, minutes to prepare!
Sheet tray suppers are my new go-to for busy nights! These Chicken Fajita Tacos are baked right in the oven. Throw everything on the sheet tray, pop it in, forget about it, pull it out and dinner is served. Plus, cleaning up after this dinner is a BREEZE!
I am obsessed with goat cheese. I would basically eat it on anything. My Pecan & Goat Cheese Pasta is light enough for a summer supper, but so flavorful and full of goodness that you’ll want to eat it year around.
Nothing says Friday like a Jalapeno Popper Burger.

At my store, you can buy it either in a can or in a plastic container. When in doubt, ask your fish monger :).
