Happy Monday, friends!
In honor of my newest book, Simmers, which comes out in October, I thought I’d dedicate our Meal Planning Monday to all things slow cooker. All five of this week’s entrees can be prepared in my favorite little kitchen appliance so that your weeknights are super simple! Just throw everything in while you’re sipping your morning coffee and then come suppertime, dinner is DONE! Nothing makes me feel more like a super mom than when we walk in the door after a busy day of school/speech/dance/whatnot and dinner is ready and waiting on us. It makes me SO DARN HAPPY! My Chicken Cacciatore is one of those so simple you’ll think you’re doing something wrong recipes. You put everything in and then at the end of the day, you just need to boil off some pasta and dinner is done!
Maple Bourbon Pork Tenderloin Sandwiches for your Tuesday. Give me all the maple this time of year!
You have to have a Buffalo Chicken Chili recipe in your repertoire this fall and winter. It’s always such a crowd pleaser and bonus, it’s super simple to whip up!
Mmmmm…my Crock Pot Enchilada Tacos are always a hit at our house! I bet we eat some version of this at least once a week during the school year!
And wrap up your week with my Cheesy Chicken Pasta…because it’s Friday and the more carbs the merrier!
Looking for something sweet? My Autumn Applesauce is not only delicious, but it will make your house smell like fall too! We love whipping this up in September!

Have you ever put oatmeal in the Applesauce? I am thinking of trying this for breakfast and the oats would bulk it up a bit I’m thinking. If I put oats in it, would I need to add more water or add milk?
