Meal Planning Monday #215

Meal Planning Monday

Happy Monday, friends!  I hope you all had a warm and cozy January weekend.  This week, I’m doing a theme each night.  Grab your coffee, pad and pen and let’s make our grocery lists!  We have Meatless Monday, Taco Tuesday, Sloppy Joe Wednesday, Slow Cooker Thursday and Fajita Friday! xo

Broccoli & Swiss Quiche

For Meatless Monday, try my Broccoli & Swiss Quiche.  Pair this with a salad and dinner is done!  Growing up, quiche for dinner was a regular at our house.  You can make this in advance and just pop it in the oven when you’re ready to bake.  Easy as pie…or quiche 🙂 .

Taco Tortellini Skillet

For Taco Tuesday?  My Taco Tortellini Skillet!  All the bells and whistles of a taco, but in a great (and easy!) one pot supper.

For Hump Day, try my Turkey Piccata JoesSloppy Joes (any version!) are always a huge hit at my house.  And bonus, this comes together in no time flat.

Saucy Bleu Cheese Brisket Sandwiches

For your Slow Cooker Thursday…I give you my Saucy Bleu Cheese Brisket Sandwiches.  Me oh my oh!  These are soooooooo good!!!  You will absolutely love how delicious this recipe is!

And finally, for Fajita Friday…my Chicken Fajita Soup.  What a nice way to end your week!

Looking for a little sweet treat to make this week?  How about…

Citrus Poppy Seed Olive Oil Cake

…my Citrus Poppy Seed Olive Oil Cake?  Not only is this simple, but it’s delicious too!

That wraps up Meal Planning Monday!  Happy grocery shopping 🙂 .

Love your taco tortellini skillet! And I have the brisket in my meal plan already for this month 😀 I need to find someplace to stick in the turkey piccata joes though. It sounds delicious!

My family and I have enjoyed many of your recipes- thank you!
I have a question for you- do you now use 2 pounds of ground beef/turkey/chicken and double your recipes for you family of 6, or are you still making just one pound dinners: your recipes as is? I have been wondering about this! 😊

We have started to use two pounds of ground beef (and double the other ingredients). We didn’t for a while because the little two are so small, but now, we do.
