For Meatless Monday, try my Broccoli & Swiss Quiche. Pair this with a salad and dinner is done! Growing up, quiche for dinner was a regular at our house. You can make this in advance and just pop it in the oven when you’re ready to bake. Easy as pie…or quiche 🙂 .
For Taco Tuesday? My Taco Tortellini Skillet! All the bells and whistles of a taco, but in a great (and easy!) one pot supper.
For Hump Day, try my Turkey Piccata Joes! Sloppy Joes (any version!) are always a huge hit at my house. And bonus, this comes together in no time flat.
For your Slow Cooker Thursday…I give you my Saucy Bleu Cheese Brisket Sandwiches. Me oh my oh! These are soooooooo good!!! You will absolutely love how delicious this recipe is!
And finally, for Fajita Friday…my Chicken Fajita Soup. What a nice way to end your week!

I have a question for you- do you now use 2 pounds of ground beef/turkey/chicken and double your recipes for you family of 6, or are you still making just one pound dinners: your recipes as is? I have been wondering about this! ?

We have started to use two pounds of ground beef (and double the other ingredients). We didn’t for a while because the little two are so small, but now, we do.
