It’s Monday…and we’re on SPRING BREAK!!

I am just so darn happy right now 🙂 .
If you’re keeping up on Instagram and/or Facebook, we are with the Slaughter family enjoying our Disney Land & Sea vacation! We’ve already hit up Walt Disney World and now…we’re on a Disney Cruise. We’re basically having the best time ever and don’t want to come home. Someone forward our mail. And dogs.
Even though I’m away, I’m still going to be here every day this week! Make sure you come on back tomorrow for more 🙂 .

I mean…right out of the gate, something SO SIMPLE! My Sheet Tray Supper of Sausage, Potatoes & Veggies has been a huge hit, so you must try it too! Seriously, the easiest part about your Monday will be this supper.
Before the weather warms up too much, I have to get a few more cozy recipes into my menu for the week. My Chicken Pot Pie is one of my very favorite suppers to make. It’s just a big bowl of cozy.
Speaking of cozy…my Beef & Mushroom Ragu over Pasta is the perfect meal to hunker down with on hump day.
This Bacon & Spinach Quiche recipe is one of Manda’s 🙂 . Growing up, my mama made quiche on a regular basis for supper (always served with a green salad) and now, so do I. Such a staple at our house!
And this recipe of mine is an oldie but a goodie (it was one of the very first recipes that I posted five years ago!). My Chicken Fajita Soup is one of those yummy soups that’s warm and hearty but not too rich for a March evening. Tons of flavor, not too much heat (so very family-friendly!).
And this week, you need to make something for St. Patrick’s Day! Try this…
…my Creamy Mint Brownies. Seriously…they’re divine! And a festive St. Paddy’s Day breakfast too…
…my green pancakes for St. Paddy’s Day. We make them every year and they’re always a hit 🙂 .
