We eat Sloppy Joes a lot around here. It is one of my kiddos’ favorite meals! In fact, I made this exact recipe (for the one millionth time) just this past Sunday night and Andrew declared it time to start tripling the recipe (we typically double it). So, today’s post isn’t really even a recipe…it’s just a reminder to make Sloppy Joes for your fam and then change it up and stuff a spud with it when you need a new way to serve it (in lieu of a bun). Easy, right?! Want to hear something else I do? Sometimes, I make this around 2:30 and then just pour it in my slow cooker to keep on warm until we’re ready to eat. This way, it’s even easier to serve come dinnertime.

This recipe serves four.
1 pound ground beef
Extra Virgin Olive Oil (EVOO)
salt and pepper
1 onion, chopped
1 (10 oz) can tomato soup, undiluted
1 (8 oz) can tomato sauce
1 cup ketchup
1/4 cup brown sugar
2 tablespoons Worcestershire Sauce
1 teaspoon prepared mustard
1/4 teaspoon garlic powder
4 Potatoes
Sour cream to garnish
Chopped green onions to garnish
Shredded cheddar to garnish

Yum! Yes, we’ve even cooked our potatoes in the slow cooker before (wrapped in foil) and they turned out perfectly. This sounds like the perfect meal for our soccer double-header nights!

Looks great! I remember at my elementary school they served up what they called “Texas Straw Hats” for lunch once a month and it was a day that everyone HAD to buy hot lunch because they were delicious! It was Sloppy Joe mix on top of tortilla chips, then topped with shredded cheese. Have you ever heard of this? Is it a Texas thing?
