It’s October 1st!!!!!!!!
I just love this month so much! In fact, I get a little panicked because even though it’s just beginning, I don’t want it to end.

My mother-in-law has the BEST slow cooker roast recipe. I love, love, love walking inside after a long day and smelling this heavenly dinner simmering away in my slow cooker. This recipe should be on repeat in your kitchen all fall and winter long.
My kids always love sloppy joes for dinner, so my Sloppy Joe Pot Pies are always a huge hit! For your first Friday in October, you should watch Hocus Pocus and enjoy a big bowl of this! That would make us oh so happy!
And I couldn’t wrap up this week’s Meal Planning Monday without a little more pumpkin. My Chocolate Chip Pumpkin Bars for the win this week. They are incredible. Like seriously, they’re divine.
And finally, my Tex-Mex Potato Breakfast Casserole. This makes the perfect breakfast or even supper too (just add a green salad and you’re good to go!).

Hi Shay,
I tried your chipotle pumpkin and sausage pasta yesterday. I did something a little different since I didn’t have the peppers, I used Harissa infused olive oil and it still gave a great kick! My husband who is not a pumpkin person loved it too! Thanks for a great fall recipe! Go Red Sox!

Hi Shay, This evening I have my family coming over for dinner to celebrate my sisters birthday and I’m going to make your Pot Roast and Mashed Potato Casserole. I have a question about the pot roast. I’m getting ready to put it in my slow cooker but I just noticed it says to cook on HIGH for 8-10 hours. I’ve never cooked a roast that long on HIGH in my slow cooker so I’m nervous it might not come out moist and tender. Is this correct? Thank you!
