It’s Meal Planning Monday Tuesday!
I don’t know about you…but the last thing I want to think about this morning is what to make for dinner tonight. After a crazy fun weekend and the fact that we only have three more days of school left, my mind is a million other places besides supper. This week’s menu is easy, quick and delicious too.

I’m starting off my week with Crock Pot Enchilada Tacos. During the summer, we eat tacos like this at least once a week. Your kitchen stays cool because they’re prepped in the slow cooker, everyone can kind of build their own, they’re super family friendly and they’re ready and waiting on you when you get home. Love them!
Pineapple Lime Tilapia just tastes like summertime. We serve ours over wild rice and alongside roasted green beans.
Have you made my Easiest Ever Shrimp & Grits? This one is such a family-favorite!!
Round out your week with my Jalapeno Popper Burgers. It’s a juicy beef burger with a jalapeno popper topping. Basically, it’s perfection!

Hi Shay! Do you have a chicken marinade you always go to for grilling chicken? Or does it depend on what you’re doing with the chicken after its cooked? I’m looking for something other than my regular Italian dressing and Worcestershire.

It kind of depends on what I”m doing. Olive Oil with fresh lime juice and lime zest is a great one! You can also add pineapple juice in there too!
