Happy Monday, friends!
It’s the official first day of FALL!!!
And yet…
…Yup.
This is my only post for today because…I had an EPIC weekend, friends.
E-P-I-C.
Why?
Because I finished Game of Thrones.
(You didn’t think I’d finish, did you?)
ME EITHER!!!!
Ha!
I did, and we can chat about that later, but for now, let’s chat about what we should eat this week as that’s always what my kids want to know first thing in the morning. I’ll say “Good morning!” and they’re all “What’s for dinner tonight?”. Whhhhhhhhhy do they do that?!
This week, we have a nice mix of sports and practices, so all of the dinners in this week’s Meal Planning Monday require little effort but will give optimal results.

Kick your week off with my Pulled Pork Rice Bowls! This is a great recipe for leftover pork or you can make a double batch and enjoy the pork another night that week as well! It’s such an easy slow cooker recipe!!
There’s nothing simpler than Trader Joe’s Meatballs for dinner! Don’t have a Trader Joe’s near you? You can adapt this little method with whatever you have at your supermarket!
These Easy BBQ Chicken Taquitos are just that, EASY!
I’m such a fan of chili! It just never, ever lets me down! Cozy up on this night with my Beer Cheese Chili!

I can’t wait to hear what your overall thought is on Game of Thrones! As a huge fan, season 8 was kinda a let down for me. What did your husband think of the last season? Anddddd to piggy back on a previous post about binge worthy shows, Vikings would be a good follow up to GoT’s if Andrew hasn’t seen it!

Hi shay! I wanted to share one of my families favorite recipes with you. It’s my kids most requested dinner. I hope you try it! We call it magic bean soup
INGREDIENTS
1-2 TBSP olive oil
8 oz of brown mushrooms (sliced)
1 yellow onion (diced)
3 cloves of garlic (minced)
1 small jar of oil-packed sun-dried tomatoes (drained)
2 cans of diced tomatoes
2 cans of Cannellini beans (drained & rinsed)
1 jar/can of quartered artichoke hearts (drained)
1 tsp dried oregano
1 tsp dried thyme
slice bread
shredded cheese
DIRECTIONS
Preheat broiler to 400°.
Heat 1 TBSP olive oil in a large pot over medium-high until shimmering. Add 8 oz of brown mushrooms (sliced) and stir for 1-2 min then add 1 yellow onion (diced) (and more olive oil if needed). Saute until lightly browned, about 3 min.
Add 3 cloves of garlic (minced) and 1 small jar of oil-packed sun-dried tomatoes (drained) and cook another 2 min.
Add 2 cans of diced tomatoes, 2 cans of Cannellini beans (drained & rinsed), 1 jar/can of quartered artichoke hearts (drained), some salt & pepper, 1 tsp dried oregano and 1 tsp dried thyme.
Cover the pan, turn the heat down to medium, and cook for 10 min.
Meanwhile, put whatever bread you have on hand on a baking sheet lined with parchment paper, top with whatever cheese you have on hand and bake under the broiler for 5 min. Garnish stew with chopped parsley.
