It’s almost Halloween!!!
How fitting is it that my 300th Meal Planning Monday should fall on a holiday week? You know how much I LOVE holidays! Clearly, it was meant to be!! Since it’s the beginning of a holiday week, our whole meal plan is inspired by one of the most fun nights of the year. From my table to yours, happy eating!
Beef & Veggie Pasta for your Monday. It’s easy, it’s hearty and it’s always a family favorite at my house!
Okay, I feel like we need to go all in on Halloween week with a “spooky” sounding supper. My Brunswick Stew is perfect for the occasion!
It’s kind of amazing to me how much I make these Beef Enchiladas. They’re just so easy and ALWAYS a hit!
It’s HALLOWEEN!!!! Tonight, you have to pick one of the entrees on my Wickedly Delicious Halloween Menu!!
The day after Halloween, we eat soup. Anyone else need to lighten things up after October 31? My Chicken & Wild Rice Soup is a great way to kick off November!

Yay for 300! I love these posts so much! They simplify meal planning for me! Quick question though I have your Chicken Parmesan on the menu for tonight but I just realized we are out of Italian seasoning? Is there something I can sub for it? Or should I go get Italian seasoning?

What other seasonings do you have? A little garlic powder, dried rosemary, basil, thyme and/or oregano would all work together!

Hey shay Your family seems to eat amazing but I was just wondering you you guys ever eat fries? I saw in a post once you talked about alexia fries out of the freezer section but how often do you eat those? Like once every 2 weeks? I am trying to make a healthy plan when it comes to that stuff.

I just had some for lunch, so YES!! We do eat the Alexia sweet potato ones, but I legit had Chick-fil-a ones just now for lunch. We eat them in moderation and not that often, but when the mood strikes us, we sure do!

Hey shay my family recently tried your lemon poppy seed spinach salad and we loved it! It’s now going to be part of our rotation. Since we loved your recipe so much we wanted to share our families favorite salad recipe that we make all the time ( we literally make this every week-haha) we call it candy salad because of all the colors.
Candy Salad:
INGREDIENTS
– 1 bag (6-8 cups) washed arugula
– 1 package cooked Israeli couscous
– 1/3-1/2 cup dried cranberries
– 1/3-1/2 cup slivered, toasted almonds
– 1.5 cups shredded cheese (mexican blend works well)
– 1 bag, thawed, roasted corn
– 1/2 container Trader Joes Bruschetta sauce
DIRECTIONS
1) Mix ingredients and enjoy. If preparing ahead, add arugula right before serving and a little more dressing.
Bruschetta Sauce
1/3-1/2 c olive oil
4 T balsamic vinegar
2 cloves chopped garlic
1 cup tomatoes, chopped finely (I like grape tomatoes in this)
1/4 c finely chopped basil

Hey I had your Crispy Shrimp Tacos on the menu for Wednesday but now my family says they don’t feel like tacos! I was really looking forward to these and I already bought the shrimp. Is there something else I could serve the crispy shrimp over other than a tortilla?

Hey shay I need some help in the baby name department. We have twin daughters named Blayke Louise and Esme Grace. Our last name is Fay. We are expecting another little girl in only 3 weeks. We are going to use the middle name Katherine but we are trying to decide on a first name. The two names we really like are piper and posie.
