It’s the week before Thanksgiving!
Anyone else have a crazy (yet fun-filled) week ahead? All four kiddos have some sort of Thanksgiving thing going on this week. I feel like the middle of November got here QUICKLY this year!!
So, let’s kick off this Monday with our meal planning and then hit the road. This week, I have SIX suppers for you to chose from. Settle in with your list and coffee and let’s get plannin’!

My mom has been making this version of Chicken & Dumplings as long as I can remember. It’s PERFECT for a chilly evening!
Three cheers for Chicken Enchilada Mac & Cheese! If you use your slow cooker or Instant Pot to poach the chicken, this recipe is done in no time flat. You could also use a fully cooked rotisserie chicken from the grocery store too!
Thursday nights are my favorite…and so is this French Onion Soup recipe.
And wrap up your week with one of my yummy Meatball Subs. Doesn’t that just look like a Friday night to you?!
For dessert this week, you should try my Pumpkin Spice Coffee Cake. It works well for breakfast too!
And speaking of breakfast, my Bacon and Tot Casserole will be the hit of your Saturday brunch this week. I mean…bacon and tots?! YES, PLEASE!

Hey shay I’m going to make the chicken and dumplings tonight. I had a thought though. My family loves your pumpkin drop biscuits this time of year. Do you think it would work/taste good if I was to make the dough for your pumpkin biscuits and use that in the chicken and dumpings instead of buying a can of biscuits?
