It’s SPRING!
I love “spring” food so much!
Okay, I really love “fall” food, but come this time of year, I get into spring-y food too 🙂 .
Whether you have these ingredients in your pantry/freezer or just need a little spring encouragement, I have five simple spring suppers for your week. Over the weekend, I was looking through my March edition of Southern Living and just seeing the bright colors of strawberries, yellow corn and bright green veggies, made my heart happy.

Whether you have frozen salmon or fresh, you can whip this up with very few ingredients. My Salmon with Avocado Chive Mash is really easy and delish too!
We are always on a Chicken Tortilla Soup kick over here. It’s just EASY and can be mixed and matched for everyone in your family with toppings (I love candied jalapenos on mine!).
Instead of a heavy meat sauce, try my Roasted Garlic & Shrimp Spaghetti for your pasta night! My kids favorite meals are when I combine noodles and shrimp 🙂 .
Andrew made crab cakes for lunch twice last week with canned crab meat. My kids even love crab cakes, and it’s easy to tweak for gluten-free meals as well. If you don’t have breadcrumbs or panko, you can always make your own with crushed crackers or even tortilla chips!
Finally this week, whip up a Sheet Tray Supper! I have so many varieties HERE like this Sausage, Sweet Potatoes & Brussels Sprouts!
Do you know what a Hummingbird Cake is? In the South, it’s a staple in the spring. You will not find a more moist cake than this. Promise.
And a light little breakfast for your spring morning? My Dutch Baby Pancake. There is just a tiny bit of lemon in there that takes this easy dessert to a extra yummy level.

hey shay how many chicken breasts does your family of 6 typically use for one supper? I am making your chicken parm this week and I finally found chicken breasts at my local grocery store!

Typically we eat 2 pounds (which can be about 6 breasts). I always order from behind the butcher counter and that’s what I get.
