Hello! Hello!
Don’t know what to make for dinner tonight? No worries because I have your week in meals all planned out for you!
We’re starting with…
…Hawaiian Chicken & Rice in the slow cooker. This one is super simple to pull together on a Monday because the slow cooker does all the work for you!
I just told Erika last week that her family should try my Sloppy Joe Stuffed Spuds next! They’re yummy and easy!!
Before the clock strikes summer, I want to post one more little soup recipe…my Chicken Enchilada Quinoa Soup is hearty enough to fall in the chili category and delicious enough that you might want to double the recipe.
Throw a Sheet Tray Supper in the oven on Thursday. Dinner (and clean up!) will never be easier!
And finish off your week with my Grilled Shrimp Tacos with Avocado Corn Salsa. They just taste like a Friday!
Your kids will LOVE making an Oreo Peanut Butter Ice Box Pie! It’s so easy to assemble and yummy to eat!
And if you’re looking for a breakfast recipe, my Ham & Swiss Croissant Casserole is the perfect choice. It also doubles as an entree if you want breakfast for dinner!
I hope you had a wonderful weekend, friends!
Happy meal planning!

Why have I never made that pie?

Hi do you think trader joe’s fresh gluten free pasta would work in your cheesy chicken pasta in the slow cooker? Would I still cook it for 30 minutes at the end?
Mix and Match Mama says
No, I would add that in the last 10 minutes!
Jaime says
Do you have any ideas of something I could sub for the peanut butter in your oreo peanut butter ice box pie? We have peanut allergies over here.
Mix and Match Mama says
How does Almond Butter work for you guys? Is that an easy substitution for you?
Jaime says
Nut free*
Mix and Match Mama says
For this recipe, I think you could use Nutella too, but if you really want it nut-free, then totally omit it and add in whatever other flavor you guys love. Like fresh lemon juice? Or butterscotch ice cream topping?

Good morning, Shay. I planned to make your Hawaiian Chicken and Rice this week, but my grocery order did not include the crushed pineapple or the pineapple juice I had ordered. I may try substituting Ocean Spray Cran-pineapple juice and using the two Dole pineapple fruit cups I have left in the fridge from my daughter’s school lunches. Do you think that might work? If I try it, I’ll let you know how it tastes with a bit of cranberry in there!
Mix and Match Mama says
I think cranberry and chicken goes beautifully together (like Thanksgiving dinner with turkey and cranberry!). Let me know how it turns out!

We first made your sloppy joe stuffed spuds a year or two ago; and now they are a family favorite! My son wanted them last week for his birthday dinner ?.
Mix and Match Mama says
Well, this just makes me HAPPY!

Hi I saw you had a recipe for Southwestern Egg Rolls on your blog and i’m so excited! Those are my favorite thing at chili’s! I’m going to make these for dinner this week. What would you serve with them for a side?
Mix and Match Mama says
I would serve a big green salad and perhaps some corn on the side too!
