It’s our first day of school!!
Even though my kiddos are starting the year back virtually, we’re going to enjoy all of our favorite first day of school foods. You know me, I love a good tradition 🙂 .

Years and years ago, my kids requested my green pancakes (which we typically make on St. Paddy’s Day!) for their first day of school breakfast and well, it stuck! We now make these every single year on the first day!
If your family isn’t into green pancakes, then you should try my Apple Bacon Pancakes instead! They are AMAZING!!
We always, always have my Butterscotch Maple No Bake Cookies after school on the first day. It’s such a special tradition!!
This year, I wanted to always include Flourless Peanut Butter Cookies too for a great after school snack!
For dinner, our tradition is lasagna 🙂 . You can make either my delicious g-free version or…
…my Provolone Lasagna. Both are winning first day of school recipes!

Sausage balls are easy!! I use Owen’s Natural Sausage and gluten free Bisquick. Super easy! The pigs are another story…I cannot find a quick, easy and delicious g-free pastry dough. If you have any suggestions, please let me know!!!

Do you have any recipes using cassava in the place of flour? I’d like to make homemade pasta with it but am afraid it will require many trial and errors like using coconut flour for bechamel sauce – which never worked, BTW! LOL!

Can I just say you have me excited to go back to school?!? I have had knots in my stomach about the virtual year and now you have me wanting to bake, make cute snacks and a traditional meal so my kids are full and happy. I’ve seen you reference your green pancakes so many times but never clicked on the recipe til today to realize…cake mix?! Ok, yum!! Celiac daughter here too – how did you adapt these for K today?? What cake mix and what GF flour did you use?

I used a Pillsbury yellow cake mix and then Cup 4 Cup flour! Super easy 🙂 !

I retired from teaching in 2016, but a friend and colleague has a sweet husband who started the tradition of taking her out to dinner every year on the first day of school. Lucky her!

I tried your Butterscotch Maple No Bake Cookies and they are amazing. I have made chocolate peanut butter no bake cookies and my kids always loved them but I really like the new ones.
