A whole lot of being unplugged.
After a week of us all sitting and staring at our computer screens, I was ready to be outside and away from phones and computers. We had a really nice week here in North Texas and the weather finally gave us a little reprieve (it picked back up over the weekend), but my kids were quick to point out that I’m happiest when it’s not so hot outside. Ha! That is absolutely correct! When it’s too hot to even go outside for a short walk, it’s too hot. The tease of nice weather has me even more excited for fall. So, here’s hoping for a bit of beautiful weather wherever you are this morning. From my kitchen to yours, happy meal planning!

Taco Rice Bowls are always a hit around here! My family loves to pile on all of their favorite toppings. That creamy jalapeno sauce from Trader Joe’s is always on my bowl. It’s super spicy and totally delish!

Hi Shay…..Wondering what your very favorite slow cooker is. I have a crock pot and I use it quite often, but thought it might be a fun way to treat myself for having allll these people home to cook for with an upgrade with all the bells & whistles. I checked your stories but didn’t see any info on which slow cooker you prefer. Thank you!!

My favorite is the Williams-Sonoma All Clad but I also still use the one I got when we were engaged…it’s 17 years old, from target and still works like a charm!

Shay, for the King Ranch…what are you using now that your daughter is gluten free? I have been gfree for 10 years and always pass right by a recipe that has cream of anything soup.

Hi Shay! For the apple cinnamon muffins- do you peel the apples before grating or do you grate them with the skin on?

Just curious on if you think it would be doable to make the sausage eggplant pasta in the slow cooker? I was thinking I could brown the sausage, then add everything except the noodles to the slow cooker in the morning, but wasn’t sure how the eggplant would fare after cooking all day. Thankful for all your slow cooker meals! I’m a school OT and am so excited to come home to supper already made, after crazy busy days!
